This is Chantereves' step up into serious white Burgundy - a Chassagne-Montrachet premier cru Chardonnay from within the celebrated Morgeot climat, one of the appellation's largest and most respected sites for structured, ageworthy whites. Tomoko Kuriyama and Guillaume Bott source the fruit from organically farmed vines and handle it with their trademark restraint: gentle whole-bunch pressing, a native-yeast ferment, aging in barrel and then on the fine lees in tank, with little to no new oak and barely any sulfur. The idea is to let Morgeot's richness and depth speak without makeup, giving a white that pairs generous body with clarity and cut.
