Dalmore, Single Malt Scotch, 12 Year
The Dalmore Distillery, founded in 1839 by Alexander Matheson along the Cromarty Firth in the Scottish Highlands, crafts single malt Scotch of remarkable character and complexity. The 12-year-old expression represents the distillery's principal offering—a masterclass in balance between fruit, oak, and the subtle distillery character that emerges from Dalmore's copper pot stills. The whisky undergoes a unique maturation process: nine years aging in American white oak previously used for bourbon, followed by three years of finishing in 30-year-old Matusalem oloroso sherry casks (for half the whisky) while the remainder matures in bourbon casks. This dual maturation creates a whisky of remarkable richness: vanilla and honey leap from the glass, followed by citrus and spice, with aromas of Seville orange and dried fruits. The palate shows roasted coffee and dark chocolate. At 43% ABV, the whisky has earned the Gold Medal from the San Francisco World Spirits Competition and 91 points from the Beverage Testing Institute. Excellent sipped neat or with a single large ice cube.
