This particular bottling uses 100% Newtown Pippin apples from Restoration Farm in Bethpage—a historic Queens apple variety grown on trees with 30+ year-old rootstock, completely unsprayed and naturally farmed. The fruit was harvested as 'drops' throughout October, then fermented in tank before being racked into barrel mid-fermentation in November for extended aging and complexity development. At 7.3% ABV, the cider achieves remarkable balance between the Newtown Pippin's tart, structured character and subtle sweetness from careful fermentation management.
