Guillaume Gilles learned Cornas the right way, apprenticing under the legendary Robert Michel before a stint with Jean-Louis Chave, then striking out on his own and renting Michel's old vines in the lieu-dit of Chaillot. This bottling comes from those organically farmed Chaillot vines, planted in the 1970s on granite and worked entirely by hand. It's 100% Syrah, whole-cluster fermented with native yeast, long maceration, then aged in old demi-muids with zero new oak. The result is pure, traditional, ageworthy Cornas. The 2010 was a superb vintage; decant it now or keep cellaring.
