Saignée method: brief Pinot Noir skin contact for delicate color, then traditional-method fermentation and aging, hand-disgorged in March 2023 with two grams per liter dosage. The 2018 vintage returned to a cool, late rhythm after several warm years, allowing slow ripening that built aromatic complexity while preserving bright acidity. Berry, white flowers, saline brightness, and a hint of sea-spray minerality in the finish. Where the Heintz bottling leans toward elegance, the Hirsch brings a wilder, more maritime energy.
