Tucked into Montsant — Priorat's quietly serious neighbor — Capçanes began making Peraj Ha'abib (Hebrew for 'Flower of Spring') in 1995 at the request of Barcelona's Jewish community, and has been pushing the kosher conversation forward ever since. This Pinot Noir bottling is a recent and unusual chapter: declassified to D.O. Catalunya (Pinot is not a Montsant variety), sourced from a single estate parcel at 500-600 meters on clay and slate, aged twelve months in new French oak. Floral, fresh and elegant, with red fruit, gentle spice and a quietly persistent finish. Certified kosher, kosher for Passover, mevushal; just 2,000 bottles produced.
