The Loi family works the wild, mountainous southeast of the island, where the sea is never far away and the roads are never particularly safe, and they farm organically. Nuo is their Vermentino, and it does exactly what a great island white should: citrus and green herbs up front, a bitter-almond snap in the middle, and a saline, savory finish instead of sweetness or oak. It's a beach wine with something to say. Chill it hard and put it next to anything that came out of the water.
