Toni Carbo farms La Salada from steep, rocky high-Penedes vineyards his grandfather bought because they were all the family could afford - land once dismissed as inferior and now prized. La Bufarella comes from a single north-facing plot of Xarel.lo planted in 1982, farmed organically and biodynamically. Given several months of skin contact and fermented with native yeasts and nothing added - no sulfur, no commercial yeast - it is bottled unfined and unfiltered. The result is a vibrant, savory skin-contact white with texture, energy and a real sense of place.
