It is the fourth of Chantereves' single-vineyard Aligotes, and the one that leans most toward tension and length rather than flesh. Tomoko Kuriyama and Guillaume Bott farm organically and keep the winemaking hands-off: whole-bunch pressing, native-yeast fermentation, aging in barrel and then on the lees in tank, and the barest touch of sulfur.
