The Deforges family have spent decades building this estate around Tibouren, a rare, ancient, thin-skinned Provençal grape that most of their neighbors tore out years ago in favor of easier, higher-yielding varieties. In red form Tibouren is a completely different animal from the famous flor-aged pink: lighter-framed, savory, herbal, more Mediterranean scrub than fruit bomb. The vineyards are farmed organically and sit close enough to the sea that the salt breeze is part of the equation.
