The real magic happens in the cellar, where the wine ages about a year under a veil of flor in hundred-year-old foudres, a Sherry- and Jura-like technique that gives it savory depth and texture no ordinary rose can touch. Organically farmed (certified organic), roughly 90% Tibouren with a splash of Grenache. This is rose for the table and for people who think they don't like rose.
