Working biodynamically at the foot of the Alpilles outside Saint-Remy, Hauvette farms a small jewel-box estate of limestone-rich vineyards that produce wines of remarkable precision and depth. Cornaline is her structured cuvee: roughly 50% Grenache, 30% Syrah, 20% Cabernet Sauvignon, fermented in wood, then aged for years in large foudre with virtually no added sulfur. The 2020 is layered and complex — ripe black fruits, black olive, truffle, a flash of mint — built on a frame of cool acidity and saline minerality. Provence as it deserves to be: serious, age-worthy, and impossibly elegant.
