The Assyrtiko Φ Phi represents a rare oxidative interpretation of this variety—complex and contemplative rather than fresh and mineral-driven. Extended aging in older oak develops nutty, honeyed character with preserved lemon notes. The 2017 is now fully mature, showing apple marmalade, dried tangerine, and beeswax textures.
