High-altitude Etna from a Canarian winemaker drawn to volcanic terroir. Eduardo Torres Acosta grew up with his father's vines in Tenerife, studied enology, then landed on Mount Etna in 2012 working with Arianna Occhipinti and Passopisciaro. Quota N comes from a half-hectare parcel at 1,070 meters—too high for DOC Etna, hence the IGT designation. The ungrafted bush vines are 80-100 years old, co-planted in the old style. Organic farming, native yeast, concrete aging, minimal sulfur. Vibrant, mineral-driven, and utterly distinctive.
