The soul of Vergisson, bottled. L' me Forest is Eric Forest's flagship Pouilly-Fuissé, a blend of four parcels averaging fifty years old planted on the northern flank of the famous Vergisson rock. The soils are pure Mâconnais magic — marl and ancient decomposed-oyster-shell limestone that gives this Chardonnay a tensile, mineral spine you can almost chew. Hand-harvested, fermented and aged in barriques and demi-muids (with a discreet hand on new oak), the wine arrives layered and slow-revealing: orchard fruit and stone-fruit lift, citrus pith, white flowers, and a long saline finish. Forest belongs to the new wave of Mâconnais vignerons producing whites that rival Côte de Beaune neighbors at a fraction of the bombast. A serious, patient white Burgundy.
