Les Faverelles is a small organic estate in Vezelay, the far-northern corner of Burgundy run by Patrick and Isabelle, ex-Paris booksellers turned vignerons. Cuvee Fleur is the more ambitious white, all Chardonnay pressed straight into old oak foudres, fermented with native yeasts, unfiltered and low in sulfur. The big neutral barrels add texture and breadth without any oak flavor, giving this more weight than their steel cuvee while keeping the cool-climate freshness.
