Eight hundred years of winemaking and a single grape in the bottle. La Commanderie de Peyrassol was founded by the Knights Templar in the 13th century and has been making wine on this Provence estate ever since; Philippe Austruy took over in 2001 and has restored the place to its full ambition. Le Clos is the top white cuvée: 100% Rolle (the local name for Vermentino), grown in a doline of Triassic clay and limestone surrounded by dry stone walls. Gentle pneumatic pressing, careful juice selection, aged 12 to 14 months in foudre and concrete eggs. The 2022 is white-flowered and stony, with the citrus drive Vermentino does best, lifted by altitude and the cool nights of the Var. A serious Provence white with a stunning history behind it.
