PM Spirits Project, Cask Selection Fino Sherry, NV

PM Spirits Project, Cask Selection Fino Sherry, NV

This is a truly singular sherry. Almost all Jerez wines are blended, fractionally, often for years, then many casks are blended together from a final criadera to make a wine. They are uniform, predictable, and showcase the mastery of the regions blenders.

This is different. From a single cask in a bodega in El Puerto de Santa María, it showed such exceptional qualities, of vibrant grace that master blender himself, Eduardo Ojeda (Equipo Navazos/Valdespino) and partner Nicolas Palazzi (PM Spirits) decided it deserved a bottle all on its own.

Drink on its own on a sunny day, or open a tin of anchovies, squeeze some lemon, sprinkle with cilantro, take a bit, wash it down with a swig of PM Fino and pretend its 90 degrees out.
