The 2024 Cuvée Unique blends Les Hâtes and Les Robinettes parcels due to low yields—partial whole cluster, 10-day maceration with native yeast, 10 months in oak. This was a pre-phylloxera wine region between Sancerre and Chablis, now being revived. Natural Burgundy from a new generation.
