Christophe and Yuka Mittnacht farm at the foot of Hunawihr's fortified church, and they were among the very first estates in Alsace to make that commitment. Terres d'Etoiles is their Crémant: a Pinot-family blend built around Auxerrois, made in the traditional method and aged on its lees to build texture and depth. Extra Brut means the dosage is minimal, so what lands in the glass is crisp, dry and mineral rather than soft and sweetened.
